Amazing Cheesy Potato Casserole!
This post is really late considering the fact that I made this nearly two weeks ago. But I wanted to post about it anyway. Above you see the most amazing, cheesy, holy-oh-my-god-so-good dish you've probably ever seen. Don't think it looks tasty? Well then make it, taste it, and you will find out that you were just plain WRONG. Because of my gosh you guys, this was so, so good!!!
I got the recipe off of Pinterest (duh...) and it originally came from this awesome site. All you need is....
3 cups potatoes, peeled, boiled and cut into cubes when they cool
4 tbsp butter
4 tbsp flour
2 cups milk
1/2 tsp salt
1/4 tsp pepper
1/2 lb Velveeta cheese
1/2 cup shredded sharp cheddar cheese
1 lb skinless smoked sausage
1/8 tsp paprika
All you have to do is cut the sausage in half and then into little 'half moon' cuts like the website says. Then just cook those for 15 minutes on the stove. While the sausage cooks, go ahead and put the potatoes into a casserole dish, add the sausage, and then stir.
Next, you mix all of the other ingredients except for the cheddar cheese and the paprika into a saucepan and get them nice and smooth and melted. Then you just pour the sauce over the potato/meat mixture, sprinkle cheese and paprika on top, and bake for about 40 minutes. DONE!

Absolutely! I want to make it again too, but I don't have enough Velveeta left. I'm thinking I might be able to subsitute it with something ;)
